The chef gave us his advice so that our tasting experience was maximal, a friendly gentleman, far from innocent as his knowledge of meat is a matter of passion. I didn't have the chance to taste his pork barbecue, but I'll definitely see you next time I visit Lanaudière. Thanks also to Mamoun for his valuable behind-the-scenes work. I recommend
