I needed a way of quickly preparing a leg of lamb for some unexpected guests. I did not have the time to slow roast. The head butcher at Kostas found me a beautiful leg of lamb. He removed the bone keeping all of the meat in one piece. He then was able to butterfly the entire piece of meat and kept the entire cut an even thickness for quick and even cooking. Every single bite was enjoyed by my guests. Thank you very much. Remember to speak to the tall butcher with the earphones. He knows his stuff.
